From CCNM’s Simply Healthy Cookbook, 2002
28 oz. jar of 7 – Bean Mix, rinsed and drained
1 red bell pepper, chopped
1 fennel bulb, chopped (optional)
1 cup celery, chopped
¼ red onion, finely chopped
2 cloves garlic, minced
4 Tbsp. each, fresh basil, and mint, chopped
2 Tbsp. unrefined olive oil
1 lemon, juiced
1 Tbsp. balsamic vinegar
Salt and pepper to taste
Combine 7 – Bean Mix, red pepper, fennel, celery, onion, garlic, basil, mint, olive oil, lemon juice, balsamic vinegar, salt and pepper. Toss well but gently. Chill until ready to serve.
