½ cup rice bran
1 cup oat flour (gluten free)
1 ½ tsp. baking powder
1 ½ tsp. baking soda
¾ tsp. salt
2 eggs
¼ cup sunflower oil
½ cup brown sugar
1 tsp. vanilla
2 cups applesauce
walnuts
cinnamon, nutmeg & cloves
Preheat oven to 350º F. In a large bowl, mix together the eggs, oil, brown sugar and vanilla. Stir in the applesauce and mix well. In a separate bowl, sift together the flour, baking powder, baking soda, salt and any spices that you are using. Stir the dry ingredients into the wet ingredients until just combined, being careful not to over mix the batter. Fold in the walnuts. Spoon the batter into lined muffin tins and bake for 20 to 25 minutes until puffed and golden brown. If using mini muffin tins, bake for 10 to 15 minutes.
