Tracy’s Pancakes

Mix:

2 cups oatmeal or quinoa flakes

2 cups milk (cow’s, rice, soy etc.)

Set aside.

Mix:

1 cup almond flour

2 cups sorghum flour

1 tsp baking soda

Add 3 beaten eggs, 2 tsp lemon juice to the oatmeal/milk mixture.   Stir in the flour mix.

Cook in an oiled pan over medium heat.  Makes enough pancakes for 4-6 people.
