1 English cucumber, sliced thinly
½ tsp. sea salt
2 Tbsp. sugar
2 Tbsp. vinegar (white, rice, balsamic etc.)
Slice cucumber and sprinkle with sea salt. Leave on counter for several hours or overnight, stirring occasionally until salt pulls water out of cucumbers, making them soft. Add sugar and vinegar. Stir. For best results, let stand for 30 – 60 minutes. This salad will keep several days in fridge.
