1 handful fresh parsley
1 ½ cups cooked chickpeas or may substitute 1 can drained and rinsed
¼ cup water
1 garlic clove, minced or to taste
3 Tbsp. lemon juice
2 Tbsp. olive oil
½ tsp. ground cumin (optional)
½-1 red pepper
Heat broiler. Brush red pepper with 1 Tbsp olive oil. Place red pepper under broiler turning once or until charred (or blackened) and soft. Allow to cool and remove skin. In food processor or blender chop parsley and garlic clove. Add the rest of the ingredients and puree until smooth.
