4 cups bread cubes (use gluten free bread or spelt/rye bread which contain gluten)
⅓ cup butter, sunflower oil or olive oil
1/2 cup onion, finely chopped
½ cup celery, chopped
water
¼ tsp. pepper
dried sage to taste
poultry seasoning to taste
salt
Prepare bread cubes. Melt butter and add onion, celery and celery leaves. Sauté until tender. Add the bread cubes and seasoning. Mix together well. For a moist stuffing, add a little hot water. Put stuffing into a casserole dish and bake.
