Morning Bars

⅔ cup raisins or dried fruit pieces (apples, blueberries, dates or apricots)

½ cup butter or coconut oil or non-hydrogenated shortening (earth balance)

½ cup honey or maple syrup

4 cups rolled oats (gluten free if following gluten free diet), quinoa flakes or buckwheat flakes

¼ cup buckwheat flour, potato flour starch or rice flour

1 tsp. baking soda

½ cup chopped nuts (optional) or shredded coconut (optional)

1 cup dried fruit (blueberries, apricots or apples)

Place ⅔ cup of dried fruit pieces in a food processor fitted with the metal blade and process until smooth, about 30 seconds. Add the butter and process until smooth. Add the honey and blend until smooth. Set aside. In a large bowl, mix together oats, flour and baking soda. Stir in the nuts and dried fruit pieces. Pour the fruit-butter mixture into the oat mixture and stir until thoroughly combined. If needed, pour half of the mixture back into the processor and pulse several times. Line a 9 x 13 inch baking pan with parchment. Press the mixture firmly and evenly into the pan. Bake for 30 minutes in a 325º F. oven. Remove and let cool for at least 4 hours. Invert onto a cutting board and lift pan to remove. Peel off the parchment paper. With a long sharp knife, cut into desired granola bar sizes.
