Vegetarian Peas Pulao Rice

CCNM’S Simply Healthy Cookbook, 2002

2 – 4 cups cooked long grain rice

2 onions, sliced

2 – 4 cups mixture: almonds, raisins, dried apricots, prunes, dried cranberries,

sunflower seeds, cashews*

1 cup green peas

unrefined olive oil

Spices: salt, garam masala, curry powder, roasted curry powder, turmeric

Heat olive oil in wok or frying pan. Sauté onions until brown. Add fruit and nut mixture. Stir-fry 2 – 3 minutes to bring out the flavour. Add peas, rice and spices to taste. Continue to stir-fry, mixing thoroughly for 10 minutes.

*Purchase raw nuts and seeds that have not been roasted in salt or oil. Also, dried fruit is coated in sulphite so try to choose organic and sulphite-free.
