2 – 3 tsp. extra virgin olive oil
½ medium onion, chopped
2 cloves garlic, minced
1 scallion, finely chopped
½ red pepper, chopped
½ cup finely chopped red cabbage
1 tsp. cumin
½ tsp. coriander
1 lb. firm tofu
2 tsp. turmeric
½ cup tomato sauce
1 Tbsp. tamari Bragg’s liquid aminos (gluten free) or soy sauce (contains gluten)
2 Tbsp. chopped parsley
Place water and oil in a 10-inch skillet on medium heat. Add onion, garlic and scallion: sauté for several minutes, stirring in turmeric powder, cumin and coriander. Add red pepper and cabbage. Continue to sauté until vegetables are soft. Crumble tofu into skillet with vegetables and stir. Add tomato sauce, tamari or Bragg’s and parsley. Stir until everything is well mixed.
Makes 4 servings.
