Better Eggs Benedict

1 whole egg

1 slice of ham, precooked (organic preferably)

1 Tbsp. butter

1 Tbsp. lemon juice

1 egg yolk or egg yolk substitute (egg beaters)

cayenne pepper

salt and pepper

In a poaching pan cook one egg until egg white is firm and yolk is soft. Set aside with precooked ham. Melt butter and keep it on hand. In a blender place one egg yolk substitute, lemon juice, a dash of cayenne pepper and salt and pepper to taste. Add melted butter to egg yolk mixture and blend again. On a plate place poached egg on top of slice of ham. Pour hollandaise (egg yolk mixture) over the egg and serve while sauce is still hot.
