This recipe is free from dairy, gluten, eggs and sugar which makes it a very detox friendly treat. These balls are super yummy and freeze well. They can be used instead of a protein bar, for a quick breakfast or as a healthy option on a dessert tray.
Toast @ 350 for 10-15 minutes
½ cup sunflower seeds
½ cup walnuts (or almonds or pecans)
Chop walnuts finely, mix with sunflower seeds and:
1-cup almond or cashew butter
½ cup brown rice syrup (or maple syrup)
½ cup carob powder/cocoa powder
½ cup rolled oats (gluten free)
¼ tsp. vanilla
1 tbs. Sesame seeds
Wet hands and shape mix into 2-in. balls. Roll in ¾ cup of coconut (or crushed almonds, or other allowed nut). Chill.
If substituting maple for brown rice syrup then add maple syrup last in order to achieve desired thickness. This recipe works without carob powder as well.
