1 mango
1 papaya
2 kiwi fruit
DRESSING:
3 passion fruit
thinly pared lime rind
juice of 1 lime
1 tsp. hazelnut or walnut oil
1 Tbsp. clear honey
Peel the mango, cut it into three slices around the stone; cut the flesh into chunks and place in a large serving bowl. Peel the papaya and cut it in half. Scoop out the seeds using a spoon, then chop the flesh into similar-size chunks and add to the serving bowl. Cut both ends off each kiwi fruit; stand them on a board. Using a small sharp knife, slice off the skin. Cut each kiwi fruit in half lengthwise, then cut into fairly thick slices. Place in the serving bowl with the other fruit and gently mix together. To make the dressing, cut each passion fruit in half. Scoop the seeds with a teaspoon and place in a sieve set over a small bowl. Press the seeds well to extract all their juices. Lightly whisk the remaining dressing ingredients into the passion fruit juice, then pour the dressing over the fruit. Mix gently to combine. Leave to chill for 1 hour.
