These are one of my favourite Christmas cookies. Be prepared to stand at the stove stirring for a very long time, but they are worth it!
3 egg whites, beaten until stiff
1 cup sugar
1 Tbsp. cornstarch
¼ tsp. salt
2 cups coconut
½ tsp. almond extract
Preheat oven to 300º F. Combine egg whites, sugar and cornstarch in double boiler. Cook over boiling water, stirring constantly for 20 minutes. Remove from heat and add remaining ingredients. Drop by spoonful onto lightly greased cookie sheet. Bake 18 – 20 minutes until browned. Cool on wire racks. Makes 2 dozen cookies.
