Beet Borscht

7 cups water or vegetable stock

4 cups beets, chopped or shredded

1 cup green cabbage, shredded

½ cup onion, finely chopped

1 Tbsp. lemon juice

2 cloves garlic, chopped

2 bay leaves

1 tsp. salt

1 tsp. honey

⅓ cup fresh dill, finely chopped

½ cup fresh parsley, finely chopped

Bring the water or vegetable stock to a simmer. Add beets and onions and simmer 15 minutes. Add lemon juice and honey and simmer 10 more minutes. Add cabbage and simmer 15 more minutes. Add the dill and parsley just before serving.

Makes 8 servings.
