Topping/ your pick of:
Onions, red peppers, mushrooms, asparagus, sun-dried tomatoes, cooked potatoes
Leftover turkey or chicken, smoked meat
Fresh herbs
Sauté in olive oil and set aside.
Beat 2 eggs with
1 – 2 Tbsp. soy milk/ cow’s milk/ rice milk/ or cold water
Salt, pepper and paprika (optional)
Heat olive oil in frying pan on medium heat. Add eggs and cook until set on top. Flip eggs and cook for 30 seconds. Put topping mixture on half of cooked eggs. Add cheese/ goat cheese (optional) if desired. Fold omelette in half and serve.
