Spicy Spanish Scrambled Eggs

3 egg whites and 1 egg yolk

½ cup skim, 1% milk or soy/rice milk

2 Tbsp. salsa

salt and pepper to taste

In a bowl beat eggs, milk, salt and pepper. Pour in non-stick frying pan and start to cook. When eggs are almost cooked, add salsa and stir it through until the eggs are light and fluffy. Fruit or a salad of your choice may accompany this on the side.
