Walnut Date Muffins (grain free)

1/2 C coconut oil, liquified

1/4 C maple syrup

4 eggs

1 Tbsp vanilla extract

2 C almond flour

1/2 C flax meal

1 tsp baking soda

1/2 tsp. salt

1 C walnuts (or other nuts), chopped

1/2 to 1 1/2 C dates, chopped


1. Melt coconut oil and whisk with maple syrup

2. Add eggs and whisk in one at a time

3. In separate bowl, combine almond flour, flax, salt and baking soda

4. Slowly add dry ingredients to wet as you beat or mix to combine

5. Fold in nuts and dates

6. Spoon one tablespoon of batter onto greased or lined muffin tins

7. Bake at 350 degrees for 20 minutes until top just starts to brown
