Peppers with Basil

2 Tbsp. extra virgin olive oil
1 medium-sized onion, chopped
2 cloves garlic, crushed
4 large red peppers, seeded and chopped
1 tsp. oregano
½ tsp. salt
¼ tsp. pepper
4 Tbsp. finely chopped fresh basil (or dried)
½ tsp. fresh rosemary
2 Tbsp. lemon juice

In a frying pan, gently heat the oil in a little water, and then stir-fry the onion and garlic until the onion turns limp. Stir in the pepper pieces, oregano, salt and pepper, then sauté over medium heat for about 15 minutes or until the pepper pieces soften, stirring occasionally. Stir in the basil, rosemary and lemon juice. Serve immediately.
Makes 4 servings.
