Roasted Chicken

Rub skin of chicken with olive oil. Season with salt and pepper. Optional also add any of the following, poultry seasoning, garlic, garlic powder, basil, oregano, tarragon, rosemary, thyme or lemon. Cook at 375º F. approx. 1 hour in covered roasting pan then uncover and cook until browned on top and legs move easily.
