Marinated Beet Salad

5 cooked beets, sliced ¼ inch thick
1 medium onion, sliced thinly and separated into rings
1 medium English cucumber, sliced
1 tsp. dried or fresh dill
½ cup apple cider vinegar
½ tsp. dulse powder or salt
½ tsp. honey or maple syrup
1 cup sprouts

Combine vinegar, dulse powder, sweetener and dill. Pour over beets and chill for several hours. Before serving add the onions and cucumbers. Top with sprouts.
Makes 5 servings.
