Healthy French Fries

Pre-heat oven to 425° F. Cut up potatoes into uniform sized quarters, French fry shapes or ¼” slices. Preferably leave peel on. Place cut up potatoes in bowl and toss with olive oil or melted butter. Use only one teaspoon of fat per potato. Spread potatoes on cookie sheet sprayed with a non-stick cooking spray. Bake for 45 minutes or until browned and tender. Serve hot.

Variation: Use sweet potato instead of white potato
