12 oz raspberries, fresh or frozen
2 Tbsp. honey
1 passion fruit
1 ½ lb. small strawberries
Place the raspberries and honey in a saucepan and warm over a very gentle heat to release the juices. When the juices start to run, simmer for 5 minutes, stirring occasionally. Set aside and allow the mixture to cool. Halve the passion fruit and using a teaspoon, carefully scoop out the seeds and juice into a small bowl. Put the raspberries into a food processor or blender; add the passion fruit and blend until smooth. Place the raspberry and passion fruit sauce in a fine nylon sieve and press the purée through to remove the gritty seeds. Spoon some of the sauce over the strawberries and serve. Pass extra sauce separately.
