Tofu Spinach Stuffed Pasta Shells (contains gluten)

2 Tbsp. unrefined olive oil
2 pkgs. frozen spinach
garlic cloves, minced
1 pkg. soft/silken tofu
salt to taste
1 pkg. jumbo pasta shells (contains gluten)
tomato sauce of your choice

Preheat oven to 350º F. In frying pan over medium-high heat, sauté garlic and spinach in oil. Cook until the garlic is soft. In a bowl, mash silken tofu with fork, add salt to taste. Meanwhile cook pasta as per instructions on package. Once spinach is ready, chop spinach and garlic finely and combine with tofu. In a casserole dish, spoon some of your chosen tomato sauce to cover the bottom. Fill pasta shells with tofu spinach mixture and arrange in the dish. Spoon remaining tomato sauce over the top. Bake covered, for 20 minutes or until thoroughly heated
