Greens – any sort e.g. Spring mix, spinach, lettuce etc.
Dressing- your favourite
Sea salt and pepper (optional)
Toss salad greens in a small amount of dressing. Add a touch of sea salt and ground pepper.
Add:
Something Sweet- raisins, dried cranberries, fresh sliced pear, orange, strawberry, mango etc.
Some Sort of Protein- beans, chicken, turkey, steak, marinated cooked tofu, (leave out the protein if salad is an appetizer but include if it is a main course)
Something Crunchy- chopped nuts such as pecans or walnuts, sliced almonds, sunflower, flax or pumpkin seeds
Something Cheesy- fresh Parmesan, feta, goat or sheep cheese, cheddar or mozzarella cheese.
Toss lightly. The beauty of this salad is anything except the greens can be left out and the salad is still fantastic!
