Summer Smoothie

from CCNM’s Simply Healthy Cookbook, 2002

1 cup mango
1 cup fresh carrot juice
1 cup strawberries, diced
⅓ cup red bell pepper, chopped

Combine the mango and carrot juice in a blender. Add the strawberries and red bell pepper. Blend until smooth. Top with a swirl of carrot strips (optional) and serve immediately.
