Almond Rice Cookies

1 cup white rice flour
¾ cup confectioners sugar
¼ tsp. salt
½ cup finely ground almonds
6 Tbsp. peanut oil/almond oil
1 egg, well beaten
1 Tbsp. almond flavouring
whole blanched almonds (for garnish)

Preheat oven to 375º F. In a mixing bowl, blend together flour, sugar, salt and almonds. Add the peanut oil and cut the dough using a fork until it feels like cornmeal. Stir in the egg and flavouring. This should form dough that will roll out on a lightly rice-floured surface. Roll ¼ inch thick. Cut cookies into 2-inch rounds and press a whole almond into the centre of each. Put on a greased cookie sheet and bake for 15 minutes. Makes 24 cookies.
