4 oz. good quality semisweet or bittersweet chocolate, chopped
½ cup butter
⅔ cup granulated sugar
½ cup unsweetened cocoa powder
Butter and flour 8 inch round baking pan. Melt chocolate and butter in metal bowl over boiling water or in a glass bowl in a microwave oven. Pour into mixing bowl. Whisk with sugar. Add eggs, whisking well. Gently fold in cocoa. Do not over mix. Pour into prepared greased and cocoa powdered pan. Bake in preheated 375º F. oven 20 – 25 minutes or until just done in centre. Cool on rack 5 minutes, then invert on to serving plate.
