Rice Bread

1 ¾ cups white or brown rice flour
½ cup tapioca flour or starch
2 tsp xanthan gum
1 tsp salt
1 tsp active dry yeast
1 ¼ cups warm water (105 to 115º F)
2 tbsp olive oil
2 eggs
2 tbsp honey or maple syrup (optional)
Mix and sift rice flour, tapioca flour or starch, xanthan gum, salt and yeast.  Using a mixer with a paddle attachment or a hand held mixer, mix water, oil, eggs, and honey or maple syrup (if using).

Gradually add to flour mixture beating constantly until the dough is smooth, about 2 to 3 minutes. Pour into a greased 9 x 5 inch loaf pan, cover with plastic wrap and let rise in warm place for 1- 1 ½ hours.

Bake in preheated 350º F oven 40 – 50 minutes until browned and cooked through. Makes one loaf.
