Dilly Bread

Makes one 8×4 in. pan
2 ¼ tsp active dry yeast
4 tsp. sugar
¼ c. water
1 c. cottage cheese
2 large eggs
1 tbsp. oil
1 tsp. cider vinegar
2 c. gluten-free flour blend
¼ tsp. potato flour (not potato starch)
1 tbsp instant chopped onion
1 tbsp. dried dill weed
1 tbsp. dill seed
¼ tsp baking soda,
½ tsp salt
2 tsp. xanthan gum
1 tsp. unflavored gelatin powder

To make in a bread machine:

Follow the bread machine instructions. Combine the dry ingredients and then pour them into the bread machine.  Then combine the liquid ingredients (using water at room temperature) and pour them over the dry ingredients in the bread machine. Set controls and bake.
