Spelt Pizza Crust (contains gluten)

CCNM’S Simply Healthy Cookbook, 2002

(contains gluten)

2 ½ cups spelt flour

1 Tbsp. fast rising yeast

1 tsp. sea salt

¼ cup unrefined olive oil

1 cup warm water

Preheat oven to 400ºF. Mix yeast and water. In a large bowl, combine spelt flour and salt. Combine yeast mixture with flour and mix in olive oil. Knead the dough until all the flour is absorbed. Cover with a clean towel and place in a warm spot for 1 hour. The dough will become doubled in size. Punch down and spread onto pizza sheet. Once again, cover, place in warm spot and let rise for approximately 30 minutes. Cover with your favourite toppings and bake until the crust is golden brown, approximately 20 – 30 minutes.
