Rice Dressing with meat for Stuffed Chicken or Turkey

2 Tbsp. oil

1 cup onions, chopped

1 cup green pepper, chopped

½ cup celery, chopped

½ cup parsley, chopped

1 Tbsp. garlic, minced

2 lb. ground round

1 lb. ground pork

salt and pepper to taste

3 cups chicken stock

6 cups cooked rice

Heat oil in large pan. Add onions, celery, parsley, and garlic and sauté about 5 to 10 minutes. Add the ground beef and pork. Brown meat until it loses its red colour. Add salt and pepper. Add chicken stock and rice. Mix well. Put in a large roaster pan and serve with  poultry. If using roasting pan, bake at 350º F. for 40 – 50 minutes.
