This recipe is a fantastic low carb, no potato option when people are craving mashed potatoes. Cut one cauliflower into florets. Put in a large pot, cover with broth. Boil until cauliflower can be easily pierced by a fork. Use a slotted spoon and place cooked cauliflower in your blender. Use either a little milk/goat milk/soy milk or broth to allow cauliflower to be pureed. The desired texture will be like a slightly thin mashed potato. If desired add butter, salt and pepper. Enjoy!
