2 envelopes unflavoured gelatin
7 cups sliced fresh or frozen peaches and apricots (or substitute canned in its own juice)
2 Tbsp apple juice concentrate
Fresh strawberries for garnish (optional)
In a small mixing bowl, soften gelatin in apple juice concentrate mixed with 6 Tbsp. water. Put peach and apricot slices into blender and blend until they become liquid. Bring to boil and add gelatin, stirring until thoroughly dissolved. Chill until it begins to thicken. Beat on high speed with mixer until fluffy and double in volume. Chill again. Mound into 8 sherbet glasses or serve from glass bowl. Garnish with 1 whole strawberry.
