1 ½ cups buckwheat flour
1 ½ cups barley flour
1 ½ cups spelt flour
¼ cup soy flour
¼ cup cornmeal
½ cup dry powdered soy milk
2 Tbsp. + 1 tsp. baking powder
Combine all ingredients and store in air-tight container.
Yields 6 cups dry mix.
TO MAKE PANCAKES OR WAFFLES:
2 cups pancake mix
1 Tbsp. freshly ground flax seeds
2 tsp. freshly ground sesame seeds
2 ½ cups water
½ banana, mashed or 2 Tbsp. apple sauce (optional)
Use whisk to mix ingredients well. Lightly oil griddle with ghee and cook; flipping with a spatula until both sides are done. Yields 10 pancakes.
